Chef Jenna Dawson


Chef Jenna Dawson developed her love of food while spending hours in the kitchen with her Grandmother who shared her love and passion for serving delicious food at the family table. She is a Graduate of Johnson and Wales University Charlotte, NC 2014 earning an Associates Degree in Culinary arts and a Bachelors in Hospitality and Foodservice management with a concentration in beverages, spirits and mixology. After graduation Jenna held internships at the Biltmore Estate in Asheville, NC and the Hilton Oceanfront resort, Hilton Head island, SC. Jenna joined Cookology as a Chef Instructor in 2014, and was promoted to Executive Kitchen Manager in 2015.

About Cookology

Since 2009, Cookology has touched the lives of thousands of people at our location at Dulles Town Center. The goal is simply to inspire people to connect with friends and family over a great meal. We teach folks to do this every day by offering professionally taught, hands-on cooking classes in our safe commercial kitchens.

Maria Kopsidas is the creator and owner of Cookology. Prior to opening the doors to Cookology, Maria spent fifteen years leading marketing and communications campaigns for Fortune 500 companies, trade associations, restaurants and charities including Discovery Channel International as publicist for India and Australia; Grocery Manufacturers Association, the largest and oldest food manufacturer association in the country, as manager of online communications; director of communications for an Electronic Data Discovery firm, and prior to opening Cookology, she was a sought-after marketing consultant with McKinley Marketing Partners.

Growing up in a Mediterranean family with philanthropists, cooks, cookbook authors, health experts and professional chefs on both sides, including a pastry chef in the White House, the idea of a an accessible, affordable cooking school was her dream. Starting in 2003, Maria took her marketing experience and love of cooking, food, health, and people and created Cookology. Finally, after six years of chasing her dream and working on her marketing career while raising a child, she secured an SBA loan, negotiated a lease, oversaw construction build out, hired her staff, and opened the doors in February 2009.​

After being a part the local food scene for years, Maria is constantly being asked where local restaurants can find cooks and Chefs who actually know how to cook!  She was surprised to find out that so many who come from four year Culinary schools have a lot of knowledge, but not necessarily the skill to produce beautiful, heart-felt food.  Out of this need, The Cookology Professional Program was born.  Its goal is to provide a condensed yet comprehensive and AFFORDABLE program designed to help those who are passionate about food grow their existing career, move to a different focus, or just become a better cook.  

Chef Tony Kavalieros


Chef Tony has working experience of over 42 years as an Executive Chef, Restaurant owner, Operations manager, Cooking Instructor, Author, and Recipe creator. He brings an elaborate knowledge of the culinary arts from all over the world. "In my world, cooking is an art form and should be done with passion and determination." Chef Tony joined Cookology in 2015, and has developed a relationship with many of our students, who sign up for his classes again and again.​
